It is clear that Tasmania is the leading Australian area for the production of high quality sparkling wines. The best wines are made in the traditional French bottle ferment method (the same as used in Champagne), with such wines benefiting from extended bottle age to allow further complexity to develop.
Our Cuvée Traditionelle is made in this “méthode champenoise” style. Currently made from a blend of 60% Pinot Noir and 40% Chardonnay (two of the ‘Noble’ grape varieties), this wine spends at least four years – and often up to five years – on its lees to develop the traditional and sought-after creamy and biscuity complexity. Previous vintages of this wine have been highly scored by Australia’s premier wine critics, as well as winning trophies and gold medals in national wine shows. We also make a frizzante (lightly sparkling) Moscato inspired wine we have called “Mosaic” from our rare German Schönburger grapes. As far as we can tell, the “Mosaic” is the only wine of its type in the world! This wine is – apart from a very small number of selected restaurants and retailers in Tasmania – only available through the website.
